Sicilian Cassata Kit

Scimone's Sicilian Cassata Kit includes everything you need to create the most classic of Sicilian sweets.

All the ingredients are portioned to create a 1.5 kg (3,31 lb) Sicilian cassata ideal for 10 portions, the ricotta is shipped in a special refrigerated isothermal package.

The kit includes:

• 1.0 kg ricotta from pure sheep's milk, sifted and sweetened, in a pastry bag ready for use
• 8 green marzipan chess pieces
• 8 sponge cake chess pieces
• 200 dark sugar (for the icing)
• 1 kg sweetened ricotta
• 150 grams of chocolate drops
• 150 grams of pumpkin cubes
• 2-layer package of sponge cake
• Bavarian tray to use as a mold
• package of candied fruit containing
• 1 channel of pumpkin (to be divided into 6 strips)
• 8 candied cherries
• 1 candied clementine
• 2 candied pears
• golden disc diameter 26 cm

How to prepare Sicilian cassata with the Scimone's Kit:

1) Arrange the sponge cake and marzipan chess pieces on the edge of the cassata mold, alternating them, place the first level of sponge cake on the bottom of the mold

2) Pour the ricotta cream into the mold with the sac à poche and close everything with the second level of sponge cake

3) Let everything rest for an hour, then turn the cassata over on the golden disc

4) On a ladle of water melt the dark sugar over low heat and when it is transparent and stringy pour the icing on the cassata

5) Decorate it with candied fruit
